Asian Slaw

We love food but hate waste, so we came up with this simple slaw recipe with Asian inspired flavours that has become a firm favourite in our Fresh range. We use any ‘ugly’ veg or any surplus veg you may have in the fridge to give it a new lease of life. Try this slaw as a side at dinner with salmon or chicken, or in a tasty & healthy lunch box at work or school. The dressing is enough for about a kilo of veg, so you can make a big batch and eat it through the week.

1kg Veg, cabbage, carrots, red onion, beetroot, peppers all work well
25ml Soy sauce
25ml Sesame oil
25ml MightyFineThings Ginger Sweet Chilli & Honey sauce
25ml Rapeseed or Olive oil
1 Garlic clove, crushed
25g Sesame seeds, toasted
Handful Fresh Coriander, finely chopped

Finely slice or grate the veg into a large mixing bowl (either on a cheese grater, a mandolin or food processor). In a measuring jug, measure out the ingredients for the dressing, plus the garlic and whisk well to combine, now pour over the dressing and toss the veg in it to coat. Finally add the toasted sesame seeds & coriander and mix again. The slaw will keep well in the fridge in a sealed container for 3–5 days.
