Cheese & Mustard Twists

These are our version of cheese straws, they are a firm favourite at Mighty Fine HQ, our wholegrain Kent Honey & Cider Mustard combined with a good strong cheese, flaky pastry & smoked paprika makes them so moreish!

Makes 16

1 sheet of Ready Rolled Puff Pastry or left over home made pastry
3 tbsp Mighty Fine Things Kent Honey & Cider Mustard
2 handfuls Grated Cheese
1 tsp Smoked Paprika
1 egg

Preheat oven to 200°C
Firstly make sure that your puff pastry is nice and cold, ideally only remove it from the fridge when you are ready to start and work quickly, warm pastry gets sticky and hard to manage. Line a large baking tray with baking parchment.
Assemble all the ingredients and grate the cheese, we like a nice strong flavour, so a bit of mature Cheddar or Comte will be excellent here. Crack the egg into a little bowl and beat it up a bit with a pastry brush. Now you are ready to assemble the straws, working quite quickly, unroll the pastry sheet and spread 3 tbsp Mighty Fine Kent Honey & Cider Mustard over it right to the edges. Next sprinkle over the cheese and using a sharp knife cut the sheet of pastry into 8 equal sized lengths and then cut these in half so you end up with 16 equal sized lengths. One at a time twist the pastry into a corkscrew shape, don’t worry about any cheese that spills out. Once twisted place each pastry twist onto the baking tray, once all 16 are twisted, brush each gently with egg wash, sprinkle any escaped cheese over the top and finally dust the twists with the smoked paprika (I used a tea strainer to avoid any clumps). Place in the oven and bake at 200°C for 15-20 minutes, they should be golden and crisp. Allow to cool before peeling off the paper and dipping into some hummus.
