We love a good dip and this is one of our go to recipes. Great on a bit of sourdough toast with roasted tomatoes or grilled bacon too.
1-2 soft avocados depending on size and what you can find at the bottom of the fridge. Don’t even try it with hard avocados.
Four cherry or one or two normal size tomatoes chopped into chunks. Over soft are fine for this.
Handful of fresh coriander finely chopped. It doesn’t need to be the leaves, use them for something else, stalks work just as well.
Half a red onion or four spring onions finely chopped.
Two tablespoons of MightyFine Sweet Chilli & Honey Sauce. This gives it chilli, garlic and a bit of sweetness. Mango or Original work best here, save the Ginger for something else.
The juice of one lime. A lemon will do it almost as well if you don’t happen to have a lime lying around – but you probably won’t need all of it.
Mash up your avocados with your lime juice. Add your tomatoes and mash again to mix in. Stir in your coriander, onion and sweet chilli & honey sauce. Ready to go. If you prefer yours smoother throw it in a blender or nutribullet and give it a quick whizz.
If you have a (no) chip emergency or prefer to make your own use thinly sliced bread. Sourdough or chopped up pitta bread works best baked in the oven for 10 minutes to crisp them up. If all you have is fluffy white bread take the rolling pin to each slice and flatten it before cutting it up and putting it in the oven. Trust us on this one.
