Pink Pickled Onions

When we want to make salads, tacos, smoked salmon, pretty much everything, look really bright & inviting & taste sweet & savoury, this is what we do.

1 Red Onion
4 tbsp Faversham Raspberry Vinegar
Pinch Sea salt

Slice your onion as finely as you can, use a sharp knife, but mind your fingers, put the onion in a small bowl, spoon over the Faversham Raspberry Vinegar, add a little salt, give it a good stir, cling film it & leave until you need to serve it, ideally an hour or more, it gets pinker & more delicious if you can wait a little.
