Posh Cheese on toast

This is our posh pimped up cheese on toast, taking those flavours to the next level with a layer of our Kent Honey & Cider Mustard and our Spiced Kent Honey to caramelise some pears. In fact it’s so posh you could use it as a starter with a nice green salad and feel quite smug!

Serves 2
2 slices Bread (use proper bread like Sourdough)
1 ripe Pear (Conference or Comice are good)
2 generous handfuls of Cheese (choose your favourite, Mature Cheddar, Gruyere, Brie, Taleggio, pretty much any cheese which melts will work here)
Mighty Fine Things Kent Honey & Cider Mustard
2tsp Mighty Fine Things Spiced Kent Honey
Olive oil (or Chilli or Garlic oil)
Few sprigs of thyme, leaves picked

Preheat your grill to medium. While it’s heating, wash the pear and cut it in half lengthwise, then each half into quarters. Carefully remove the stalk & core as you go. Arrange the pear slices on a small baking tray and drizzle over 2tsp Spiced Kent Honey, pop the pears under the grill and cook for about 15 mins, turning a couple of times to allow all sides to caramelise and turn golden in the honey.
While the pears are cooking grate your chosen cheese (or slice it if it’s very soft). Next lightly toast both sides of the bread, once toasted spread a layer of Kent Honey & Cider Mustard over the bread and top with the grated cheese, pop this under the grill and toast until the cheese is melting, golden and bubbling.
Place the cheese on toast on plates with some green leaves dressed with a little Newton’s Apple & Honey Spiced Balsamic. Pile four slices of caramelised pear on top of each slice of toast and scrape any melted honey on top too. Finally give the whole thing a quick drizzle of oil (chilli or garlic works well here) and sprinkle with thyme leaves.
