Spiced Honey & Ginger Cookies

This recipe is adapted from the Doves Farm website, it uses our Spiced Kent Honey instead of sugar, Stem Ginger for a bit of texture and Spelt flour which gives a lovely nutty flavour. Perfect any time of year with a steaming mug of tea or coffee.

175g Spelt Flour
½ tsp Baking Powder
2 tsp Ground Ginger
100g MightyFine Spiced Kent Honey
100ml Oil
4 whole pieces Stem Ginger, chopped into small pieces

Preheat oven to 170°C
Line a baking tray with parchment paper
Sieve the flour, baking powder and ginger into a bowl and stir to combine. Add the honey & oil and lastly the stem ginger pieces, stir to make a thick dough. Use a teaspoon to scoop up dollops of the mixture, form these into round shapes and flatten slightly.
Bake for 12-15 minutes until golden, allow to cool.
