Sweetcorn Fritters

These are gluten free, vegetarian, full of veg & flavour. Do not be deceived by the rather ugly looking batter, once cooked these are AMAZING!! Trust us on this. We eat these hot from the pan dipped in our Ginger Sweet Chilli & Honey sauce, for breakfast with a poached egg on top & yes cold as a snack for lunch. You will need a blender of some description to make these, a regular blender, a food processor or a smoothie maker (eg: Nutri or Ninja Bullet) all do the job.

For the Batter

150g Sweetcorn (Fresh, Drained tinned, or Frozen)
2 Cloves Garlic, chopped
½tsp Ground Ginger
½ Red Chilli, chopped
3tbsp MightyFineThings Original Sweet Chilli & Honey Sauce
1 Lime, zest only
½ Red Onion, chopped
1 egg
2tbsp Soy sauce
2 Pinches Sea Salt
Good grate Black Pepper

For the Rest
150g Sweetcorn
120g Gram Flour
2 Spring Onions, chopped
Handful of Coriander, chopped

Weigh all the ingredients for the batter into a food processor & blitz till a smooth paste, use a spatula to transfer it all to a mixing bowl. To the batter add the rest of the ingredients, Sweetcorn, Spring Onions & Gram Flour, mixing well to get rid of any lumps, last of all add the coriander.
Heat some vegetable oil in a large non-stick frying pan, use a tablespoon to measure the batter and then fry for 3 minutes per side on a medium heat, you need these to cook through to the middle so you don’t want them to colour too quickly. Drain on kitchen paper & eat whilst still hot and crispy with the MightyFineThings Sweet Chilli sauce of choice.
