Wasted Kitchen Brocamole

Guacamole – Avocado + Broccoli = Brocamole

We created a hybrid dip recently when Wasted Kitchen was given lots of brassicas. We can confirm it’s absolutely delicious. Make this on one of those disappointing days when you open an avocado & it’s all murky blackish green inside, or for one of those fridge raid meals when you know there’s some Broccoli lurking in the fridge. Great on toast for breakfast, for lunch or with nachos.

500g Broccoli
100ml Olive oil
50mls Lime juice
1 clove Garlic
1tsp dried chilli flakes, or add some freshly chopped
1 small handful of fresh Coriander
Sea Salt to taste

Wash & divide the Broccoli into florets, don’t forget to use the stalk too! Steam the Broccoli for a few minutes until tender. Rinse under cold water & leave to cool. Meanwhile measure the rest of the ingredients & add to a blender. Add the Broccoli & blitz well to combine, taste & check for seasoning, add more chilli or salt if it needs it. Keeps covered in a container in the fridge for 5 days.
