Wasted Kitchen Celeriac Remoulade
When we started discussing what we were going to make as part of the MightyFineThings & Macknade FreshToGo range Celeriac Remoulade was top of the list for all of us. It’s not as colorful as a slaw but it packs a flavourful punch that we all wanted a bit of. And, it seems, a lot of you want it too! If you want to give it a go yourself here’s our recipe.
Ingredients
- 500g of grated Celeriac (this is about half a large peeled celeriac)
- 175g of mayonnaise
- 175g of yogurt (we use Greek because it’s so thick & creamy)
- 70g crème fraiche
- 70g MightyFineThings Kent Cider & Honey Mustard
- 70g Dijon Mustard
- Salt & Pepper to taste
Method
Combine everything – except the Celeriac – to make the dressing and season to taste. Once you’re happy with the flavour combine with the grated celeriac. That’s it. It will last for about 4-5 days in the fridge if it doesn’t get eaten first. Great on it’s own, with cheese, salami, cold meats, beef…
Ideas for remaining celeriac – roast with olive oil and thyme and put in a quiche (or just eat as it is), steam or boil and mash on it’s own or with potatoes and have with sausages. Put in a slaw with other vegetables.
