Our latest MightyFine pair is our MightyFineThings Apple & Honey Spiced Balsamic Vinegar cooked slowly with red onions, paired with Blue Cheese. The onions sweeten as they reduce in the pan, leaving you with intense & gooey caramelised Balsamic onions which are really good used instead of chutney on your cheeseboard. The intense flavour & sweetness of the caramelised onions works particularly well with Blue cheese in general, but we like a creamy blue cheese such as Blue Monday which is intensely savoury & rich. We serve ours with Peter’s Yard sourdough crackers, we also recommend this pairing is tried with a Stout or Dark Bitter.
