This one in particular is a tried & tested favourite that we often make quickly at night, leave to infuse overnight in a Tupperware & bring in to eat for lunch the next day. Sweet & earthy beetroot, paired with our super fruity Great Taste Award Winning Faversham Raspberry Vinegar in a fresh & colourful beetroot Carpaccio. The beetroot is peeled & thinly sliced raw, use a knife, a mandolin or even a spiralizer, if you see the Choggia striped variety in the shops or coloured beets make sure you buy some as the colour contrasts look great in this.
Now dress the beetroot generously in MightyFine Faversham Raspberry Vinegar, add some finely diced red onion, some chopped mint leaves, a little seasoning & finally toss the whole lot in some good Extra Virgin Olive Oil. We like to eat this with a green salad, some of our Fresh to Go Hummus topped with Dukkha (available at Macknade in Faversham) & some pitta or flatbread. It’s also a nice quick side dish to eat alongside any Middle Eastern inspired meat dishes like Lamb, it’s so fresh it cuts through the richness.
