Homemade Coffee Liqueur

One of our all time favourite infusions to try, especially when made into an Espresso Martini with a dash of cardamom syrup! This is a very simple infusion, but needs a little patience as it takes a week to infuse.
Makes 1 bottle
Ingredients

For the Vodka infusion
750ml Vodka
200g Coffee Beans, cracked (these need to be a dark roast to extract the most flavour)
1 Lemon, zested

For the Coffee syrup
175ml Freshly brewed Espresso
175g Sugar

Method
In a large glass Kilner jar add the cracked coffee beans and the lemon zest, then pour over the Vodka, seal and shake well. Leave for 1 week, shaking regularly, after a week strain the Vodka into a large jug, wash the jar and pour the Vodka back into the clean Kilner. Now make the coffee syrup, to do this brew 175ml of Espresso and add to a saucepan along with 175g sugar, bring to the boil and then gently simmer until all the sugar has dissolved and you are left with a coffee flavoured syrup. Now mix the syrup into the Vodka, seal the Kilner and shake well to combine.
