Kent Mojito
The classic Cuban Mojito is thought to be the most widely drunk cocktail in the world, but this Kentish Coxy’s Mojito adds a whole other dimension to the drink, adding layers of flavour that pair so well with mint & lime. It’s a sweet, sharp, minty & spicy coxtail, that may actually be our all time favourite.
Makes 1
Ingredients
25ml Coxy’s Ginger & Honey liqueur
3 Sprigs of Mint, just the tips
1 Sugar cube
Juice ½ Lime
Fevertree Elderflower Tonic water to top up
Ice
Method
In a short glass add the Coxy’s Ginger & Honey liqueur, the mint & the sugar cube & muddle these together with the end of a wooden spoon, until the sugar is dissolved. Fill the glass with ice, or use a single round ice cube like we did, squeeze in the juice of ½ a lime & top up with Fevertree Elderflower tonic.
