Leeks Baked in MightyFine Apple & Honey Balsamic with Stilton & Walnuts

We love a good leek and at this time of year they are one of the few things we can get from the garden and they are full of flu fighting anti-oxidants. This is a super simple and super tasty way to cook them.  If you’re like us you’ll probably want to eat them straight from the pan!

And then there was none…

You will need

Three/ four medium leaks – cleaned, topped, tailed, cut in half long ways.

30ml/ 2 tbsp MightyFineThings Apple & Honey Spiced Balsamic

40g of Stilton cheese broken into ‘crumbs’

Handful of chopped walnuts to finish


Heat the oven to 190c.

Lay your leaks cut side up in a baking tray and pour the Apple & Honey Spiced Balsamic over the top.

Put a lid on or seal with foil and pop in the oven for 15-20 minutes depending on the size of the leeks and how you like yours cooked.

Take the leeks out and check that they are cooked to your liking.  If they’re not quite there spoon the Balsamic juices from the bottom of the pan over them put the lid on again and pop them back in for five minutes.  If they are there spoon the juices over, crumb the Stilton over the top and, with the top removed, put it back into the oven until the cheese is melting (2-3 minutes).

Finally sprinkle the chopped walnuts over the top and you are ready to go.  Happy Days.
