This pudding is deliciously wintery, it pairs sweet chestnuts & our boozy Figs in Kent Honey & Brandy. It feels indulgent & luxurious but takes only minutes to put together, which is always a help at Christmas time!
400ml Double cream
4 Meringue nests
1 tin Sweetened Chestnut purée (or add some spiced honey to unsweetened purée)
MightyFine Figs in Kent Honey & Brandy
MightyFine Spiced Kent Honey
Physalis or halved figs to decorate
Whip the cream to soft peaks & break up the meringues. Add a dash of the Fig brandy to the chestnut purée to thin it. Slice up about 8 figs & share between 4 glasses. Then gently fold all the other ingredients through the whipped cream. Pile into glasses, top with a drizzle of honey, another dash of Brandy & decorate with a halved fig or Physalis fruit. Easy Peasy.
