MightyFine Sweet Chilli & Honey Welsh Rarebit
Our pimped up versions of a classic cheese toasty in honour of St Davids Day and a comfort food classic…
You will need
100g of good strong grated cheese of the cheddar type
100g of creme fraiche
2 egg yolks
40 ml (about 4 desert spoons) MightyFineThings Sweet Chilli & Honey Sauce
Four slices of decent bread that toasts well – white sourdough is our favourite for this one.
First off pop your egg yolks and creme fraiche into a bowl and mix with a fork to combine. Add the grated cheese and mix again. Finally add the Sweet Chilli & Honey Sauce. nb – If you prefer a bit more of a zing go for ginger, sweeter tooth, try Mango…
Then toast your bread in toaster or grill and – if its not on already – get the grill heated up. If you’re up to multi-tasking this could be going on while you’re sorting the cheesey bit.
Pop a dollop of the cheese and chilli mix onto each bit of toast, spread it edge to edge, pop it under the heated grill and keep your eye on it while it bubbles away – tip put some foil underneath as can be messy and the drippy edge bits taste much better from clean foil than the dirty grill pan (just sayin’). Once it’s cooked to your liking, we like a few crispy burnt bits, whip it out from under the grill and you’re ready to go. Nice with a dash of Worcester Sauce if you’ve got it.
